At the winery…
After the harvest comes the time to vinify.
Then when the cuvées are ready, it is then necessary to devat; to pass the harvest from the vat to the press.
After pressing, after a few days in stainless steel vats, the cuvée is ready to go to the cellar for maturing in barrels.

If time permits, between devatting and entonnage, it is time to make the holes by removing the dead vines from each plot while waiting for the transplanting of the grafts.
